un  tema , del gel !
déjeme hacer unas preguntas,  una de ellas  es sobre la humedad del
producto, Que sucede con ella,?.... estoy de acuerdo con la experimentación,
básica pero entiendo que esta llena de incertidumbres, por ejemplo el punto
eutectico de la mezcla...la velocidad de transferencia,en fin creo que esta
es una aplicacion  carente ,  si comparamos con el hielo liquido o hielo gel
como comercialmente se denomina..
el hielo liquido primeramente mantiene un diferencial  térmico
-exacto-uniforme y cubre toda la superficie del marisco, evita el sobre
empaque, por ello, evita que éxista perdidas,de humedad,y mayor consumo en
mano de obra y crecimiento bacteriano..etc.
creo que el almidón mezclado con azúcar y   porcentajes  de sal  etc.. son
soluciones  que bien aplicadas  en la industria del helado, para formar
blokes de diferentes tamaños  que   crean un aislamiento térmico, limitando
a la industria del pescado-   mariscos..,de varias ventajas tecnico
comercialles.
